Watermelon & Cucumber Salad With Honey Vinaigrette
3 cups Watermelon, cubed
1/2 Cucumber, cubed
10-15 Mint Leaves, minced
2 Tbsp Honey Balsamic Vinegar
1/4 cup olive oil (Sicilian Lemon or Basil Genovese)
In a bowl combine all ingredients and toss.
Allow to sit if the fridge for at least an hour, stirring occasionally.
